St. Patrick’s Day Snack Board Tips
- Green grapes and sliced kiwis were my major filler where I had gaps. This works out well since they’re both crowd pleasers and everyone loves sweet fruit!
- I started with the green bell pepper shamrock, which was really quick to cut out, and leprechaun hats made from cucumber (or green bell pepper), yellow bell pepper, and vegan cheese (or more yellow bell pepper). They might be my favorite part of this St. Patrick’s Day Snack Board!
- Heart vegetable cutters helped to make the open-faced green hummus shamrock sandwich! Look for a spinach artichoke hummus at the store or make my Quick and Easy Creamy Hummus (I love chickpeas!) and add spinach to make it green and a little extra water.
- I used half of an avocado for the pot and filled it with yellow dye-free vegan, dark chocolate candy gems for the gold. I love how it turned out!
- The rainbow can be made from almost any fruits or vegetables. I dug around in my fridge and found strawberries/raspberries, carrots/clementines, yellow bell peppers/pineapple, honeydew/sweet peas, blueberries and red grapes. My kids loved stacking one of each on their plate to make a rainbow!
- To add some salty crunch, I used the green Pea Crisps, which are another kid favorite in our house! Green Veggie Straws also work.
